The present invention relates to a new process for the production of an edible alpha-lactalbumin-rich protein composition, which process is based on the removal of beta-lactoglobulin (BLG) from a whey protein-containing material by selective crystallisation of non-aggregated BLG. The invention also relates to a novel edible protein composition enriched in alpha-lactalbumin, the use of these compositions and food products comprising these compositions. |
