abstract | The invention relates to the technical field of soybean product detection, in particular to a detection method for main anti-nutritional factors in soybeans and soybean processed products. The present invention provides a marker for detecting the main anti-nutritional factor of soybean or soybean processed product, the anti-nutritional factor is a lectin, and the marker includes a quantitative peptide with the sequence shown in SEQ ID NO. 1. The present invention also provides a marker combination, which includes a quantitative peptide with a sequence shown in SEQ ID NO.1 and one or more selected from the quantitative peptides with a sequence shown in SEQ ID NO.2-11. Based on the above markers and marker combinations, the present invention provides an HPLC-MS/MS detection method for the main anti-nutritional factors of soybean or soybean processed products. The marker, marker combination and detection method of the invention have high sensitivity and accuracy, and can be used for quantitative detection of main anti-nutritional factors of soybean and its processed products. |
