After the reaction is finished, the modified millet starch is prepared by washing, drying, and pulverizing; 2) Dissolving the modified millet starch in deionized water Modified starch milk is prepared by adding β-cyclodextrin with a mass fraction of 1-3% in the aqueous phase of the emulsion, and then adding medium-chain triglycerides with the same mass in the aqueous phase of the emulsion as the oil phase, and after premixing, the Pickering emulsion is obtained by homogenizing. The method of the invention is simple, the production cost is low, the preparation conditions are mild, the preparation process is green and environmentally friendly, the use of surfactants is avoided, and the prepared emulsion has high stability, good emulsifiability and high biological safety.
