The optimum growth temperature is 37 ℃. The nitrite still normally grows and is effectively degraded within the range of the salt concentration of 18% and the nitrite concentration of 100 mg-500 mg/kg, and the optimal degradation rate of the nitrite reaches 98.59% after 96 hours of degradation. It has obvious effect of degrading nitrite. Can be used for degrading nitrite in food. Especially applied to the degradation of nitrite in high-salt pickled foods such as pickles, hams and the like. |
