abstract The invention relates to a method for identifying fennel honey, which comprises the following steps: (1) performing derivatization treatment on leucine and isoleucine in a honey sample to be detected by using phenyl isothiocyanate as a derivatization reagent; (2) quantitatively detecting the leucine and isoleucine derivatives in the honey sample by adopting a liquid chromatography-tandem mass spectrometry method so as to determine the leucine and isoleucine content in the honey sample; (3) and comparing and analyzing the content and the ratio of leucine to isoleucine in the honey sample to determine whether the sample to be detected is the fennel honey.
