abstract The invention discloses a formula of a liver-protecting giant salamander liver peptide wine and a production process thereof, belongs to the technical field of peptide preparation, and solves the problem that a giant salamander wine product does not have the effects of protecting and nourishing the liver, wherein the formula of the invention is prepared from the following components in parts by weight: blending the giant salamander liver peptide powder with wine liquor with the alcohol concentration of 20% -90% according to the mass ratio of 0.1% -10%, or blending the giant salamander liver peptide enzymatic hydrolysate with alcohol according to the mass ratio of 1: 9-4: 1, blending. The production process comprises the following steps: (1) crushing, cooking and carrying out enzymolysis on the liver tissue of the giant salamander to prepare a giant salamander liver peptide raw material for blending liver peptide wine; (2) placing the prepared raw materials into a centrifuge for centrifugal filtration, and removing non-enzymatic fibers and macromolecular substances; (3) mixing the filtered giant salamander liver peptide raw material with alcohol according to a required ratio; (4) and (4) putting the mixed liquor into the centrifugal machine again for filtering, and removing generated precipitate substances to obtain the finished product liquor. The product of the invention improves the detoxification ability of the liver and has the functions of protecting and nourishing the liver.
