The influence of the mass ratio, the reaction temperature, the reaction pH value and the reaction time of the phosphorylation reagent is examined by taking the phosphorus content as an index, the optimal mass ratio of the phosphorylation reagent is 5:2, the temperature is 50 ℃, the pH value is 8, the time is 3h, and the phosphorus content is 37.15% under the optimal condition. The higher the phosphorus content is, the stronger the inhibition rate of the modified xylan on the activity of the alpha-amylase is; when the phosphorus content is 24.69%, the modified xylan has the highest inhibition rate on the activity of alpha-glucosidase. The phosphorylated xylan obtained by the invention can be applied to health care products and medicines with the function of reducing blood sugar.
