The present invention relates to a okara-based beverage comprising probiotics, soluble dietary fiber, free isoflavones and esters, wherein the probiotics include probiotic bacteria and probiotic yeast. Probiotic bacteria have a cell count of at least 5.0 log CFU/mL. Also provided is a method of forming a okara-based beverage, the method comprising treating the okara with a carbohydrase to form a treated okara, adding probiotics and yeast to the treated okara, and fermenting the treated okara to form a okara-based beverage.
