The invention provides a preparation method of Pinellia koji, which is characterized in that the sterilized Pinellia koji material is fermented with Bacillus subtilis; the formula of the Pinellia koji material is: : 140-200 parts of Qing Pinellia, 8-15 parts of alum, 15-25 parts of ginger juice, and 22-40 parts of flour; 0.8-1.2 g of ginger is needed to prepare each 1 mL of the ginger juice; the fermentation conditions are: temperature 36~38℃, relative humidity 70%~80%. The use of Bacillus subtilis fermentation in the invention can ensure the quality of Pinellia koji, and combined with pure-bred fermentation, the invention has the advantages of stability and controllability, and the invention has a good prospect in the production and application of Pinellia koji. |
