abstract The invention discloses an oryzanol/sitosterol modified palm oil gel and a preparation method thereof. The oryzanol/sitosterol modified palm oil gel is prepared from the following raw materials in parts by weight: 100 parts of palm oil, compound 9.5-10 parts of gels; wherein, the composite gels are mixed from monostearic acid and β-sitosterol/γ-oryzanol. In the present invention, palm oil is used as a solvent, and monostearic glyceride and β-sitosterol/γ-oryzanol are used as composite gelling agents to convert palm oil, which is difficult to form a gel structure, into oil gel, thereby effectively reducing oil condensation. The preparation cost of the gel; while reducing the increase in the amount of saturated fatty acids in the process of converting to an oleogel.
