The present invention relates to a method of preparing a food product comprising rye, comprising the steps of: preparing a primary food mixture; adding to said primary food mixture a composition comprising at least one glycoside hydrolase family 10 (GH10) enzyme; and processing the primary food mixture to produce the rye-containing food product. The present invention further provides a GH10 enzyme, a composition comprising the enzyme, and the use of the enzyme and the composition in the preparation of a food product. |
