The invention discloses umami-flavored peptides separated from fish sauce, which can bind to umami-taste receptors T1R1/T1R3, including at least one of 1)-23) small molecule peptides; and discloses the umami-presenting mechanism. The umami-flavored peptide of the invention has a low umami-taste threshold and good freshness-enhancing effect, and has a good application prospect in preparing condiments or foods. |
