abstract The invention relates to the technical field of strain processing, and discloses a preparation method of probiotic powder by electrostatic low-temperature spray drying, which comprises the following steps: (1) preparing a fermentation base material; (2) activating strains; (3) culturing thalli; (4) carrying out heat shock on thalli; (5) concentrating thalli; (6) preparing a wall material protective agent: the wall material protective agent comprises the following raw materials of 120-230 parts of a coating agent, 3-10 parts of an electrolyte balancing agent, 1-25 parts of a water-retaining agent, 1-2 parts of an antioxidant and the balance of water; (7) preparing a mixed suspension: the mass fraction of the bacterial sludge in the mixed suspension is 15-40 wt%, and the mass fraction of the wall material protective agent is 60-85 wt%; (8) and (4) carrying out electrostatic spray drying. According to the invention, the bacterium liquid is thermally stimulated and then emulsified and embedded by the protective wall material, and the emulsion can be dried at a lower temperature by electrostatic spray drying equipment, so that the high-activity dry probiotic powder is obtained.
