abstract The invention discloses a dietary fiber, which is prepared by taking soybean, wheat, oat, orange and mung bean as raw materials, adding water, mixing the pulp under the condition that the pH value is 2.5-4.0, heating, and hydrolyzing for 4 hours at 65-85 ℃; separating hydrolysate with ultrafiltration membrane at 35 deg.C and 0.08 Mpa; vacuum concentrating and separating the obtained substance with ultrafiltration membrane, and spray drying at inlet temperature of 180 deg.C and outlet temperature of 90 deg.C to obtain dietary fiber. The dietary fiber prepared by the invention can shorten the time for food to pass through small intestine, thereby reducing the absorption of cholesterol. The product can be added into health product for reducing blood lipid, and has effects in inhibiting absorption of cholesterol and fat, reducing contents of fat and low density lipoprotein cholesterol in blood plasma, preventing oxidation of low density lipoprotein, and preventing atherosclerosis.
