abstract | The invention relates to a red date and ginger compound beverage and a preparation method thereof, wherein the preparation method comprises the following steps of (1) preparing red date juice, slicing fresh red dates, blanching the sliced red dates with 2% of salt water, putting the red dates and water into a tissue mashing machine according to the proportion of 1: 2-1: 5, pulping, filtering, adding β -cyclodextrin into filtrate for wrapping, heating in a constant-temperature water bath kettle at 60 ℃ and fully stirring for 30min, (2) preparing the ginger juice, namely, selecting fresh gingers, putting the slices into boiling water for blanching for 2min, putting the gingers and the water into the tissue mashing machine according to the proportion of 1: 1-1: 3, pulping for standby, (3) blending, namely, mixing the red date juice and the ginger juice with the water according to a certain proportion, then adding sugar, a sour agent and a stabilizing agent, stirring while mixing, (4) heating, heating for 5min at 100 ℃, continuously stirring in the heating process, and (5) finely filtering, sterilizing, cooling, obtaining the red date compound beverage with the unique taste of the ginger and soft and fresh ginger. |
