abstract The invention provides a fermentation method for improving synthesis of monascus pigment in monascus purpureus, which can promote synthesis of monascus pigment in monascus purpureus by adding a proper amount of adenosylmethionine (SAM) into an amino nitrogen source-free fermentation medium and inoculating monascus purpureus for fermentation, and can obviously improve synthesis of haematochrome, yellow pigment and orange pigment in monascus purpureus. Compared with the prior art, the fermentation method has the advantages that the synthesis of the haematochrome, the uranidin and the orange pigment can be obviously improved simultaneously only by adding adenosylmethionine (SAM), the operation is simple and convenient, and the technical guidance is provided for the preparation of the monascus pigment and related products.
