titleOfInvention Method for rapidly enriching functional flora capable of not producing smelly substances from pit mud and application of functional flora
abstract The invention discloses a method for rapidly enriching functional floras which do not produce foreign smelly substances in pit mud and application thereof, belonging to the technical field of brewing microorganisms. The invention uses the old cellar mud with better quality which is tested and screened as the seed mud, and adopts a specific culture medium to carry out the step-by-step enlarged culture on the selected high-quality cellar mud. The obtained flora is caproic acid-producing flora mainly comprising Ruminostrobus rumen flora, and the flora does not produce 4-methylphenol as mud odor substance. The mixed flora obtained by the method can be used for the fermentation process of the solid fermented grains of the cellar mud-free system, can obviously improve the content of beneficial flavor substances of the fermented grains, and avoids the generation of poor flavor substances in the cellar mud, thereby improving the quality of the raw wine. The mixed flora can also be used in the culture process of the artificial pit mud and the daily maintenance and maintenance of the pit mud process, so that the caproic acid producing main flora in the pit is increased, the aging of the pit mud is promoted, the aging and hardening of the pit mud are prevented, and the production of mud odor substances, namely 4-methylphenol, is effectively reduced.
