abstract |
An object of the present invention is to provide a method of simply coloring the surface of a gel-like food. It has been found that gelation can be achieved by allowing a divalent or higher metal ion to exist on the surface of a gel-like food, and applying an aqueous solution containing a gelling agent that reacts with a pigment and a bivalent or higher metal ion to gel. The surface of the food-like food is beautifully colored, thereby completing the present invention.
