abstract | The invention discloses a preparation method of a nattokinase microcapsule, which comprises the following steps: mixing plant polyphenol and fatty acyl chloride, dissolving in dioxane, reacting at 100 ℃ for 3-5 h under the protection of nitrogen under the action of alkaline substances to obtain a reaction product, and performing post-treatment to obtain plant polyphenol fatty acid ester; mixing nattokinase freeze-dried powder, an oil phase, plant polyphenol fatty acid ester and a water phase, homogenizing by an ultrasonic cell disruptor to obtain a W/O type emulsion embedded with nattokinase, adding the emulsion into a feeder of molecular distillation equipment, and carrying out high vacuum distillation to obtain the nattokinase microcapsule with the plant polyphenol coated with the nattokinase. The preparation method of the nattokinase microcapsule can greatly improve the encapsulation rate of the nattokinase and the stability of the nattokinase microcapsule, thereby improving the bioavailability of the nattokinase microcapsule by phase change. |
