abstract The invention discloses a method for identifying salmon sashimi and freshwater aquaculture rainbow trout sashimi, which comprises the following steps: determining the EPA and DHA content of the sashimi to be identified by using a gas chromatography, and if the total amount of the EPA and the DHA of the sample is more than 0.8g/100g, determining that the sample is the salmon with marine migration property; and if the total amount of the EPA and the DHA of the sample is less than 0.2g/100g, judging the sample to be the freshwater cultured rainbow trout. The method disclosed by the invention is used for measuring unsaturated fatty acid, analyzing the fatty acid nutritional composition of the sashimi, focusing on the total amount of key specific fatty acid, and identifying the species of the sashimi visually, quickly and accurately, and particularly can be used for identifying salmon and freshwater aquaculture rainbow trout with quite similar meat quality, color and fat texture.
