abstract | The invention discloses a preparation method of glycosylated royal jelly antioxidant peptide, which is characterized by comprising the following steps: step one, mixing royal jelly protein peptide and sugar to obtain a mixed solution for later use; step two, placing the mixed solution in the step one at 4 ℃ for 8-12 h to completely hydrate the mixed solution; and step three, reacting the hydrated protein peptide in the step two in a water bath at 60 ℃ for 70-75 hours to obtain the glycosylated royal jelly antioxidant peptide. The invention carries out glycosylation modification on the royal jelly protein peptide after enzymolysis, can improve the antioxidant activity, the solubility and the antioxidant activity in intestines and stomach of the royal jelly protein peptide, wherein the antioxidant activity of the enzymatic hydrolysate with the molecular weight less than 10KDa and the maltodextrin glycosylation product in the intestines and stomach is improved by 4-6 times. |
