By monitoring the content of 5‑H‑2 PMIS and pigment OD420, it was found that moisture content, pH value, temperature, CO2, and inhibitors had a great influence on MR. The invention determines the important intermediate substances in the Maillard reaction of chito-oligosaccharide and fills the blank.
