Cross-linked shear thinning fluids of pectic acid exhibiting increased viscosity with decreasing shear, and methods of their production and use. A shear thinning fluid is disclosed comprising an aqueous solution of pectic acid cross-linked by divalent cations. The pectic acid may be present in an amount of about 0.5% to about 3.0% (w/v), and the divalent cation may be present in a concentration of about 0.5 mM to about 7.0 mM, the viscosity of the shear thinning fluid increases with decreasing shear . These cross-linked shear thinning fluids of pectic acids can be used in controlled release formulations, cell encapsulation, and 3D printing, and provide an improved balance between structural fidelity/mechanical stability and cell viability. |
