abstract The invention provides a method for prolonging the preservation period of shelf vermicelli and a preparation device thereof, comprising the following steps: preparing raw materials, screening starch, and feeding the starch into a stirrer under the action of a screen; mixing starch and water, pasting and forming a starch solution with the mass fraction of 10%, and standing for ten minutes; adding a preservative while stirring to finally form a starch solution with the mass fraction of 25%; vacuumizing and assisting in discharging the starch to enable a starch solution with the mass fraction of 25% to enter a vermicelli mold assembly; heating and curing the vermicelli mold assembly at high temperature of 145 ℃, and naturally cooling; freezing the formed vermicelli at-20 deg.C for 14 hr; and (5) unfreezing and drying. The method and the device for prolonging the preservation period of the shelf vermicelli improve the preservative capability of the shelf vermicelli, are beneficial to prolonging the preservation period of the vermicelli, and do not harm the health of human bodies.
