abstract The invention provides a shrimp shell enzymolysis method for improving the calcium ion binding capacity in the shrimp shell, comprising the following steps: first, breaking the shrimp shell into shrimp shell powder, adding deionized water, and magnetic stirring to obtain a shrimp shell powder solution , to ensure that the concentration of shrimp shell powder solution is 10%. Next, adjust the pH of the shrimp shell powder solution to 10.0 to 11.0, add 3500 to 4500 U/g of alkaline protease, and perform enzymatic hydrolysis at 55 to 60° C. for 5 to 6 hours. Finally, after the enzymatic hydrolysis of the shrimp shell powder solution in the previous step was completed, the enzyme was inactivated at 95 °C for 15 min, cooled to room temperature, and the pH of the enzymatic hydrolyzed solution was adjusted to 7.0. After centrifugation at 4000 rpm for 15 min, the enzymatic hydrolysis was completed. After selecting the optimal enzymatic hydrolysis conditions, the hydrolysis degree of the enzymatic hydrolysis solution can reach 16.33%, and the average calcium binding amount can also reach 1.954 mg/mL, which can lay a foundation for the preparation of shrimp shell chelated calcium.
