The invention discloses a method for biodegrading patulin by using Saccharomyces cerevisiae, and relates to the field of biotechnology. Saccharomyces cerevisiae was cultivated in the medium to a cell concentration of about 1.1~1.3×10 6 CFU/mL, and then patulin was added to ferment, so as to degrade the patulin, which could be completely degraded after 96~120h. 4.0 ~5.0mg/L patulin, under the above process conditions, the soluble intracellular enzymes produced by patulin stimulated by Saccharomyces cerevisiae play a decisive role in the degradation process. The invention uses Saccharomyces cerevisiae to degrade patulin, has the advantages of high efficiency, simple operation, safety and environmental protection, etc., and provides technical support for controlling patulin pollution in food. |
