abstract | The present invention provides an oil and fat composition and a whipped non-dairy cream containing the oil and fat composition. The oil and fat composition of the present invention contains the transesterified product of palm kernel oil stearin-containing oil, palm kernel oil stearin and optional palm kernel oil, or the transesterified product, palm kernel oil stearin and palm kernel oil. Optional palm kernel oil composition. The non-hydrogenated cream prepared by the oil composition of the present invention has high whipping rate, short whipping time, improved foam hardness after whipping, thick mouthfeel, clear outline of decoration and good standing, and overcomes the problem that non-hydrogenated products are easy to cause whipping. The foam of the product is rough, the stiffness is poor, the sending time is long, and the sending rate is low. |
