The present invention relates to deacidified juice and a method for deacidifying cranberry juice to be deacidified, the cranberry juice to be deacidified is eluted at a certain rate (BV/h) on a column bed or weak anion exchange resin , so that pH=pKa1 (malic acid)<pH<pKa (benzoic acid) of the deacidified cranberry juice after elution. The present invention also relates to food compositions comprising such deacidified fruit juices. |
