titleOfInvention A Lactobacillus plantarum and its application in reducing the content of biogenic amines in fish tea
abstract The invention discloses a strain of Lactobacillus plantarum Yc-2, with a deposit number of CGMCC NO.16614; a method for reducing the content of biogenic amines in fish tea by utilizing the Lactobacillus plantarum Yc-2, comprising the steps of: setting the concentration to 10 6 The Lactobacillus plantarum Yc-2 bacterial liquid of ~10 8 CFU/mL is used as a starter, and is inoculated into the fermentation system according to 1% to 4% of the weight of the raw fish for fermentation. By inoculating Lactobacillus plantarum Yc‑2, the biogenic amines in the fish tea system are well inhibited, and the degradation rate of the total biogenic amines in the fish tea can reach more than 95%, especially the degradation rate of histamine can reach 91% above.
