The present invention relates to a sweetening composition and its preparation method and application. The method comprises the steps of obtaining the mesophyll fragments of Rubus rutabosa, extracting with water as a solvent, removing components containing phenolic hydroxyl groups, concentrating and purifying, crystallizing in water phase and the like to obtain a sweet composition. The sweet composition is white in color and inconspicuous in bitterness and astringency, contains 50-99% rubusoside by dry weight, and has an absorbance of less than 0.4 at 270-370 nm after being dissolved into an aqueous solution (1% solid content w/w). In the present invention, by removing the picroside and the phenolic hydroxyl group-containing components, the taste of the sweetening composition is better, and only pure water is used in the preparation process of the sweetening composition of the present invention, and organic solvents such as ethanol are not used. Greener and healthier, it is also suitable for the production of organic sweet leaf rubus products. The present invention also includes the sweetened composition obtained by the method and the application of the sweetened composition in food, beverages, health products, daily chemical products and medicines. |
