The Aspergillus oryzae ZA109 strain is obtained by taking Aspergillus oryzae As3.951 as an initial strain and performing mutation breeding. The aspergillus oryzae ZA109 disclosed by the invention has higher proline aminopeptidase activity, and the proline aminopeptidase generated by fermentation of the aspergillus oryzae ZA109 destroys the N-terminal proline residue of the bitter peptides, so that the purpose of removing the bitter taste of soy sauce is achieved. Meanwhile, on the basis of keeping the original enzyme system of aspergillus oryzae complete, the proline aminopeptidase with high activity can promote deep hydrolysis of protein, thereby being beneficial to reducing the consumption rate of raw materials in a starter propagation stage; the soy sauce or sauce brewed by using the strain can further improve the utilization rate of raw materials and produce a seasoning with fresh, sweet and palatable taste. |
