The invention discloses a method for preparing functional oil by mixed fungus sectional solid state fermentation, and belongs to the field of edible oil processing. The invention uses soybean as main fermentation substrate, meets the requirements of different functional nutrients, combines other oilseeds, utilizes fungus sectional solid fermentation and combines the supercritical extraction fractionation technology to achieve the purposes of improving the aftertaste of soybean oil and producing different flavors, and simultaneously improves the nutritional value of oil. The fungus sectional type solid state fermentation can improve the oil extraction rate, improve the fatty acid composition of oil and fat, increase the contents of main flavor substances such as pyrazines, alcohols, phenols and the like, and the sensory functions such as flavor, color and the like of the fungus sectional type solid state fermentation can better meet the requirements of consumers on innovative products.
