abstract | The invention provides corn oligopeptide selenium and a preparation method and application thereof. Wherein after the corn oligopeptide selenium is subjected to digestion treatment in at least one of the following three ways, the selenium content is more than 70% of that before the digestion treatment: hydrolyzing with pepsin at pH of 1.5 and temperature of 37 deg.C for 4 hr; hydrolyzing with trypsin at pH 7.5 and temperature 37 deg.C for 6 hr; the temperature was maintained constant at 37 ℃ and hydrolysis was first carried out with pepsin at a pH of 1.5 for 4 hours and then with trypsin at a pH of 7.5 for 6 hours. The corn oligopeptide selenium provided by the invention can be effectively absorbed by human bodies, and is used for selenium-supplementing health-care food and antioxidant health-care food. |
