abstract The invention discloses a haematococcus pluvialis pigment nano freeze-dried powder easily soluble in cold water and a preparation method thereof, wherein the freeze-dried powder consists of hydrophilic haematococcus pluvialis pigment/milt DNA/chitosan oligosaccharide nanospheres and lysine, wherein the haematococcus pluvialis pigment is a mixture of fat-soluble astaxanthin, astaxanthin ester and other carotenoids and is embedded in a hydrophobic micro-area formed by mutually winding chitosan molecules, chitosan molecules and milt DNA molecules; the preparation method of the haematococcus pluvialis pigment nano freeze-dried powder comprises the following steps: breaking cell wall of Haematococcus pluvialis powder, soaking, separating to obtain ethanol solution of Haematococcus pluvialis pigment, mixing with chitosan and milt DNA in sequence, performing suspension evaporation to remove ethanol, adding chitosan oligosaccharide to obtain stable nanometer suspension, adding lysine as freeze-drying protectant into the suspension, and freeze-drying to obtain final product; the haematococcus pluvialis pigment nano freeze-dried powder can be dissolved in water with the temperature lower than 20 ℃ within 2 min. The preparation method has simple process and mild conditions, and can be popularized to industrial production.
