abstract The invention discloses a method for rapid grading of sausages based on an olfactory visual array, and relates to the technical field of meat product quality detection. According to the characteristic volatile gas components of different grades of sausage in many production areas, the corresponding gas-sensing materials were screened, and a color-sensitive sensing array was constructed. The images before and after the reaction of the sensor array are obtained by the image acquisition device, and the gray mean value of each channel of each sensitive unit in the sensor array before and after the reaction is extracted, which is the odor characteristic matrix of the tested sample. A discriminant model is constructed based on the feature matrix to quickly discriminate the sausage grade. It has the characteristics of fast, non-destructive and online visualization, which can realize the rapid identification of sausage grades.
