abstract The invention discloses a preparation method of sea cucumber peptide, belonging to the technical field of aquatic product processing. The preparation method comprises the following steps: soaking fresh cooked sea cucumber with viscera removed in liquid nitrogen, taking out, soaking in 95-97 deg.C hot water, and cleaning under stirring; adding the cleaned sea cucumber into a cooking enzymolysis tank for cooking, opening a stirrer and a shearing machine of the cooking enzymolysis tank after cooking is finished, and shearing to prepare slurry; filtering the slurry, returning to the cooking enzymolysis tank, adding compound neutral protease composed of bromelain, papain and neutral protease produced by bacillus subtilis in a thiol protease system, and performing enzymolysis under heat preservation to obtain an enzymolysis product; and carrying out post-treatment on the enzymolysis product to obtain a finished product of the sea cucumber peptide. The method can thoroughly remove harmful heavy metals in the sea cucumber raw material; the enzymolysis product contains more than 85% of micromolecular peptide with the length of less than 1000 daltons; the obtained product has no fishy smell and peculiar smell.
