The present invention relates to variants of glucoamylases, in particular combinatorial variants of a parent glucoamylase with altered properties for reducing the synthesis of condensation products during starch hydrolysis. Thus, the parent glucoamylase variant is suitable for use eg in brewing and glucose syrup production. The present invention also discloses DNA constructs encoding the variants and methods of producing the glucoamylase variants in a host cell. |
