abstract The present disclosure relates to a method for detecting peroxide value in oils and fats by using a fluorescence quenching method, in particular, using phthalocyanine as a fluorescent photosensitizer, and using the quantitative quenching ability of peroxides in oils to phthalocyanine fluorescence to detect the value of phthalocyanine in edible oils. POV. The detection range is 0.2‑20meq/kg, and the sensitivity is 0.2meq/kg. The method avoids the environmental pollution caused by the use of organic solvents such as glacial isooctane acetate in the existing national standard, and also reduces the detection error caused by the use of starch reagents in the existing national standard.
