The invention discloses a method for preparing instant rice by using broken rice as a raw material. The method takes broken rice as the main material, uses modified starch, guar gum and monoglyceride as ingredients, and undergoes mixing, tempering, extrusion molding and baking. Drying and cooling make instant rice that is economical, environmentally friendly, easy to eat, full of grains, good in gloss, uniform in grain shape, and excellent in taste. |
