abstract The invention relates to a method for preparing ammonium gluconate by using potato as a raw material through an enzyme method. The method comprises the steps of firstly carrying out enzymatic liquefaction and saccharification on potatoes serving as raw materials to obtain a potato saccharification liquid, then carrying out enzymatic conversion on the saccharification liquid serving as a raw material and ammonia water serving as a neutralizing agent to obtain a crude product of ammonium gluconate, and concentrating and drying to obtain a pure product of the ammonium gluconate. The potato is used as a main grain crop, the acre yield is far higher than that of the corn, the raw material source is ensured, the cost is low, the potato is directly used for production, the processes of raw material treatment and starch extraction are reduced, the process is simple, and the raw material processing cost is greatly reduced; the prepared coarse product of the ammonium gluconate is used for soil treatment, not only can provide good carbon source and ammonium nitrogen, but also brings other nutrient components in the potato raw material, is beneficial to the proliferation of soil microorganisms and the improvement of soil ecology, and the prepared pure product of the ammonium gluconate can be used as components of a chelating agent, a disinfectant, an emulsifier, a skin care product and the like.
