abstract | The invention relates to a β-agarase with heat recovery property and application thereof. The β-agarase is a new type of β-agarase AgaA3, the amino acid sequence is shown in SEQ ID NO.1, its N-terminal contains a carbohydrate binding domain (Met 1 -Pro 167 ), and its C-terminal contains a Catalytic domain (Met 168 ‑Gly 596 ). Its amino acid sequence is only 60% similar to the sequence of β-agarase with known functions. The β-agarase AgaA3 of the present invention has heat recovery properties, and after being boiled for 10 minutes, it can be incubated at 10°C for 15 minutes, and 59.7% of its activity can be recovered. The mode of action of the enzyme is endocution, and the main product of degradation is new agar tetra- and hexasaccharides. The β-agarase AgaA3 of the present invention has stable properties, high yield and certain industrial application potential. |
