abstract | A method for preparing globin, which uses fresh animal blood as raw material, undergoes centrifugal separation, enzymatic hydrolysis with neutral protease, decolorization with carboxymethyl starch, and dissolves decolorized globin in NaCl ionic solution, and the prepared protein concentration is: 1%-4% solution, adjust pH to 7.5. Then, the protein solution was vacuum sealed in a polyethylene plastic bag (without leaving air bubbles), placed in the inner cavity of the pressure vessel, and immersed in the pressure transmission medium, and subjected to high static pressure treatment. Holding pressure for 10-30min respectively, then combined with high-voltage pulsed electric field 25-35kV/cm, 100-600μs treatment, and then freeze-drying to obtain globin with high foaming and emulsifying properties. The invention can effectively improve the foaming and emulsifying properties of globin. The technological method has the advantages of high efficiency, low pollution, little loss of nutrients and no peculiar smell. |
