abstract | The invention discloses a method for synthesizing inulin by taking inulin as a substrate, belonging to the technical field of genetic engineering. The AcDFA-IIIase as a difructose anhydride hydrolase can catalyze the substrate difructose anhydride to be the inulin disaccharide, and the optimum pH value of the catalytic reaction is 6.5 and the optimum temperature is 55 ℃. Under these conditions, AcDFA-IIIase is also able to catalyze inulin, the products being difructose anhydride and inulin. The AcDFA-IIIase has the capability of continuously catalyzing inulin, namely, inulin is firstly converted into difructose anhydride, and then the difructose anhydride is further converted into the inulin. The method for synthesizing the inulin by taking the cheap inulin as the substrate provides great reference value for the industrial production of the inulin. |
