abstract The invention provides a preparation method and application of a chelated iron donkey-hide gelatin glycopeptide, which belongs to the technical field of health care product processing. In the invention, after enzymatic hydrolysis of the glue solution, the donkey-hide gelatin peptide is modified by Maillard reaction to form the donkey-hide gelatin glycopeptide, which is then chelated with ferrous sulfate to obtain the chelated iron donkey-hide gelatin glycopeptide. The invention improves the anti-oxidation and iron content of the donkey-hide gelatin peptide, and experiments show that it has significant anti-oxidation activity and anti-anemia activity, improves the functionality of the donkey-hide gelatin peptide, and has good health care effects.
