abstract The invention particularly relates to a method for promoting deamidation modification of wheat protein by using an organic acid type natural eutectic solvent. Synthesizing a natural eutectic solvent by organic acid and natural monosaccharide or disaccharide according to the molar ratio of 1:1, adding water for dilution, preparing a 2-15 wt% protein suspension from wheat protein in the natural eutectic solvent, hydrating at normal temperature, and performing deamidation modification at 121 ℃. On the basis of deamidation modification and dissolution promotion of the wheat protein by the organic acid, the method can further obviously improve the solubility and the deamidation degree of the protein under the same condition, obviously improve the deamidation degree by 10-20% compared with the deamidation of the pure organic acid, and overcome the problems that the wheat protein is difficult to dissolve and realize high deamidation degree and the like. The preparation method is simple and efficient in production process, green and safe, strong in implementability and suitable for industrial large-scale production and preparation.
