abstract | The present invention relates to a stevia extract and a sweetening composition. The stevia extract contains rebaudioside B, and the concentration of rebaudioside B is in the range of 10-60% by weight of the total amount of sweet steviol glycoside compounds in the stevia extract, and contains rebaudioside A, the concentration of rebaudioside A is in the range of 40-90% by weight of the total amount of sweet steviol glycoside compounds in the Stevia rebaudiana extract. The sweet composition contains a sweet steviol glycoside compound, wherein the sweet stevia glycoside compound contains rebaudioside B, and the concentration of rebaudioside B in the sweet composition is sweet. Within the range of 10-60% by weight of the total amount of steviol glycoside compounds, and containing rebaudioside A, the concentration of rebaudioside A is in the sweetness composition of the total amount of sweet steve alcohol glycoside compounds in the range of 40-90% by weight. The sweetening composition has good flavor properties compared to other high intensity sweetener compounds and can be used in the preparation of consumables. |
