The method for preparing the black garlic polyphenol by extracting the black garlic by the compound enzyme method has the advantages of simple process, mild conditions, water as an extraction solvent, no use of an organic solvent and high extraction efficiency of the black garlic polyphenol, and the black garlic polyphenol prepared by the method has the hydroxyl radical scavenging capacity, the DPP radical scavenging capacity and the reducing capacity. |
