abstract | A method for sterilizing food products having a porous outer surface. The method includes the steps of: providing a sterilization chamber; selectively conveying the food product through the sterilization chamber at a predetermined rate such that the food product is seated in the sterilization chamber for a predetermined period of time; providing a source of sterilizing steam , the sterilizing steam source provides the sterilizing steam with a temperature within a predetermined acceptable temperature range and a concentration within a predetermined acceptable concentration range; delivering the sterilizing steam from the sterilizing steam source to the a sterilization chamber; and exposing the food product to the sterilizing steam. The predetermined period of time and the predetermined acceptable concentration range of the sterilizing steam are selected such that the sterilizing steam does not penetrate the porous outer surface of the food product. |
