abstract | The invention relates to a method for efficiently preparing wheat oligopeptides. Specifically, the present invention provides a method for pretreatment of gluten, which includes heating the mixture of gluten and water at a temperature above 100° C., and extruding the heated product with twin-screws. The present invention also provides a method for efficiently preparing wheat oligopeptides, which includes the step of pretreating gluten by using the gluten pretreatment method. The present invention also includes the pretreated gluten and wheat oligopeptide products obtained by the method of the present invention. The method of the invention has a short enzymatic hydrolysis cycle, and even if the pH value is not adjusted, the product has less ash content and high content of short peptides. |
