abstract | The invention discloses a preparation method of edible printing ink, which comprises the following steps: (1) ultrasonically dissolving cyclodextrin and ferric salt in water, and controlling the pH value of the aqueous solution to be 4-6 in the process; (2) adding carbohydrate sweetener and colorant, and mixing; (3) adding soybean lecithin for secondary mixing; wherein the weight ratio of the cyclodextrin to the ferric salt to the water is 3-9:1: 7-25. The edible printing ink has good viscosity and surface tension, has good adhesion capacity on the surface of hydrophobic substances, avoids the generation of printing defects, simultaneously takes cyclodextrin, ferric salt, water, carbohydrate sweetener, colorant and soybean lecithin as raw materials, does not contain components which are considered by consumers and are in doubt, such as monohydric alcohol, dihydric alcohol or surfactant and the like, and is beneficial to the popularization and sale of food. |
